GRAPEFRUIT CUCUMBER AND MINT SALAD
Yields: 1 serving
1 large grapefruit, peeled and segmented
1/2 small cucumber, peeled (optional) and julienned
1 small sprig of mint, minced
1/2 tsp honey, a pinch of coarse salt
Toss the grapefruit segments, cucumber slices, and mint in a small bowl. Drizzle with honey and sprinkle with a pinch of course salt. Enjoy immediately or store in an airtight container in the fridge.
