MAGIC MORNING GREEN DRINK
Yields: 1 large or 2 small
INGREDIENTS
2 cups spinach leaves (fresh or loosely frozen)
1/2 cup Greek yogurt (I use 2%)
1/2 cup water or coconut water
1-2 TBS freshly juiced ginger (2 for the fire!)
1 TBS freshly juiced turmeric (optional)
1/2 - 1 medium frozen banana (chopped)*
*Note: I've gotten into the habit of only using half a banana for a lower calorie/sugar/carbohydrate version. Although the taste and texture do benefit from the whole banana, I still find it very satisfying and refreshing this way. Please note that even with 1 whole banana, this drink will not be sweet. It isn't intended to be (see above post).
INSTRUCTIONS
First peel and juice the ginger and turmeric if you don't have any juice handy (juices can keep for several days refrigerated in tightly sealed containers). Unless you have an excellent juicer, you'll need a nice big piece of ginger (4-6") and a couple medium-sized (2-3") pieces of turmeric. Add the spinach, yogurt, coconut water, and juices to a blender and blend thoroughly. Add the banana and blend well. Drink up!
