FENNEL APPLE AND GRAPEFRUIT SALAD (QUICKIE)
Yields: 1 serving
INGREDIENTS
a large handful of butter or bibb lettuce (about 1 1/2 cups), ribboned
1/2 small fennel bulb, very finely sliced
1/2 small green apple, cored and sliced
1/2 red grapefruit, (divided) half segmented, half juiced for the dressing
2 TBS grapefruit juice (from above), 2 TBS lemon juice, 1 TBS olive oil, 1 tsp honey
1/2 umbel of fennel flowers, broken up into umblets
1 TBS shelled, toasted sunflower seeds
INSTRUCTIONS
Toss the lettuce, sliced fennel, green apple, and segmented grapefruit together. Whisk together the grapefruit juice, lemon juice, olive oil, and honey together to form the dressing. There is a generous amount of dressing here, so dress the salad to taste. Top with fennel flowers and sunflower seeds.
