NUTTY COCONUT GRANOLA
Cook Time: 1 hour
Yields: 6 cups
INGREDIENTS
3 cups oats, 2 cups crushed or slivered nuts (I usually use walnuts, pecans, and almonds)
1 cup sweetened shredded coconut, 1/4 cup (packed) brown sugar
1/4 cup maple syrup (the real stuff!), 1/4 cup vegetable oil, 1 tsp salt
INSTRUCTIONS
Preheat oven to 350 F. In a large bowl, mix together the oats, nuts, coconut, and brown sugar. In a smaller bowl, whisk together the maple syrup, oil, and salt. Pour the syrup mixture into the oat and nut mixture. Mix well and don't be afraid to use your hands to make sure the oat and nut mixture is thoroughly coated. Divide the mixture between two ungreased baking trays. Pop them both onto the center rack of your oven. Bake for about 20 minutes, or until it's a deep golden brown, stirring half way in between to ensure even baking. Once cooled, toss with dried fruit if desired or leave it as it is. Store in an airtight jar or container for up to two weeks.
